I am not much of a cook, but this is a really simple way to make a great salad that covers all the food groups. It’s a very loose recipe because you can use whatever you have in the fridge and can be made in less than 20 minutes.
Asian Steak (or whatever meat you have) Salad
|Beef or chicken||Teriyaki sauce|
|Soy Sauce||Sesame seed oil|
|Edamame beans *frozen is fine||Noodles, soba noodles are great and healthy, but I sometimes use whole wheat spaghetti because it’s easier to buy.|
|Romain lettuce or spinach|
|almonds or any kind of nuts (chopped)||carrots (shredded)|
|green onion (chopped)||rice wine vinegar|
Marinade steak/chicken in a teriyaki sauce. I use a freezer bag, (put however many pieces you think will need for your family) add sauce and leave it over night. Sometimes I’ll flip the bag so the other side will get some marinade as well. I use the broiler and cook it for 8-10 minutes on each side until cooked. Let it cool for a bit then, cut it into small bite size pieces.
Cook the noodles according to the directions on the packaging. You can drop in the edamame beans in the water about 2 min before your noodles are done.
Drain and cook it with a dash of soy sauce in the same pot. (To save time, sometimes I’ll cook extra pasta and freeze it so when I make the salad I just need to defrost it and add it to my salad.)
Wash and chop lettuce or spinach, and other optional ingredients to your liking.
In a salad bowl, mix all the ingredients with more soy sauce, sesame seed oil (add rice wine vinegar, chopped nuts, green onion, and shredded carrots if you wish).
