Happy You Near!
When my daughter was little – (she’s five now and “next year I’m gonna be a grown-up Mommy”) – she called it You Near and You Nork. Sometimes it’s too stinkin’ cute to correct.
I overindulged during the holiday season. I ate desserts, which I usually don’t eat. I ate vegetables that were hidden under alot of yummy cheese and sour cream, which I usually don’t eat. I drank soda pop, which I usually don’t drink. But everything, even the vegetables, were all extra tasty because we enjoyed them with friends and family which we usually don’t see enough of.
This is a nice treat to make with your kids any time of the year to have for breakfast, snacks and even makes a nice homemade gift for someone special.
Granola
3 cups rolled oats | 1/4 cup plus 2 TB maple syrup |
1 cup slivered almonds | 1/4 cup warm water |
1 cup chopped cashews | 3/4 Teaspoon salt* |
3/4 cup shredded coconut | 1 cup raisins or any favorite dried fruit |
1/4 cup plus 2 TB brown sugar |
1. Preheat oven to 325 degrees.
2. In a large bowl combine oats, nuts, coconut and brown sugar.
3. In a separate bowl combine syrup, water and salt. Combine both mixtures and pour in jelly roll pan.
4. Cook 11 minutes. Stir. Cook another 19 minutes.
*If using salted or lightly salted nuts skip the salt.
When cool, remove from pan to an airtight container. Mix in fruit and enjoy!
