I overindulged over the holidays. It seems however, that my holidays don’t just include Christmas and New Year’s, but also any random day of the week during any random month.
My daughter and I went for girl’s night out last week and she ordered chicken fingers and french fries with a side salad but only ate the salad because the rest was “just junk food Mommy.” She’s five years old. I should be more like her.
Spinach and Orzo Salad with Peppers
8 ounces orzo (pasta that looks like fat rice) | 5 ounces (half a bag) of fresh spinach |
1/4 cup feta, crumbled | 1/4 red onion, chopped |
1/3 cup pine nuts | 3 tablespoons chopped roasted red peppers |
1/4 teaspoon dried basil | dash of pepper |
1/4 cup olive oil | 1/4 cup balsamic vinegar |
Cook orzo according to package directions. Drain and rinse under cold water to stop cooking process so the orzo doesn’t become a large mushy lump. Put orzo in bowl and add spinach, feta, onion, pine nuts, roasted red pepper, basil and white pepper. Whisk the olive oil and balsamic vinegar in a bowl and pour just enough on salad to dampen the spinach leaves. Toss – if it seems too dry add a little more dressing and toss again.
And now, to be more like my daughter I’m going to jog to throw in a load of laundry, then jog to make the bed, then jog to brush my teeth, then jog to…you get the idea.
