I know what you are thinking. You are thinking that there is no way that good for you and chocolate chip cookie belong in the same sentence! Well let me tell you these cookies not only have some healthy ingredients (minus the chocolate chips), but they taste good too. This is a recipe that you need to make when your kids are not looking. My 16 year old son still does not know what he is eating and this recipe uses an ingredient that he does not like. I even made these up and brought them into his martial arts class and all of the kids kept asking for more. Is your interest piqued yet? Okay I will give you the recipe. I just want to let you know that my girlfriend in Minnesota, Vicky Despain, gave me this recipe.
Good for You Chocolate Chip Cookies
|2 and 1/4 cup flour (I used white wheat flour)||1 tsp baking soda|
|1 tsp salt||1 cup Great Northern Beans|
|3/4 cup granulated sugar||3/4 cup brown sugar|
|1 tsp of vanilla||2 eggs|
|1 bag of chocolate chips|
Preheat your oven to 350 degrees. Put your beans that you have drained in your mixer and beat until smooth. This was the hardest part for me because it did not smell like you would want cookies to smell. Just trust me they are yummy in the end. Next add your sugars, vanilla, and eggs. Beat until well mixed. I then add my baking soda and salt and mix. I slowly add my flour and mix just until all the flour is mixed together. Then add your chocolate chips.
Drop by spoonfuls onto a greased cookie sheet or, you can use the scoop from Pampered Chef, that is a great tool to use.
Bake for 8 -10 minutes.
Nobody will ever know that you used beans in your cookies unless you tell them. So make sure that you dispose of your can before anyone sees it. Please leave me a comment and let me know how your family and friends like your cookies.
