Pancakes for Dinner!

We just celebrated National Pancake Day!  IHOP even gets in on the celebration and offers free pancakes all day long.  We love to eat pancakes at our house!  I knew that I wanted to make some, the question was for what meal do we have them.  Breakfast was out of the question because my son gets up early for a religion class before school and A: I did not want to be up that early, and B: we would not have the time to enjoy them.  No one would be home for lunch, so dinner was the obvious answer.  I have a super easy and oh so delicious recipe that I would love to share.  You may even decide to stay away from the box mixes after you try these.



1 cup flour 2 Tablespoons sugar
1 Tablespoon baking powder 1/2 teaspoon salt
1 egg 1 cup milk
2 Tablespoons oil


Mix flour, sugar, baking powder, and salt together.  Beat your egg, milk, and oil together and add to your flour mixture.  Mix all together with a wire whisk until well blended and smooth.

Cook on a hot griddle.


Add chocolate chips or blueberries to your pancakes once they are cooking on the griddle.  I like to do this rather than mix it in the batter because sometimes we have people who want plain pancakes or even people who do not like chocolate chips or blueberries. (Can’t imagine that!)

You can even mash up some bananas and add that to your batter with some chopped walnuts, for some banana walnut pancakes.

Chop up some apples really small and add the chopped apples and some cinnamon to your batter for apple cinnamon pancakes.

Better yet, ask your family what flavor combinations that they would like to try.

I know that we like to have pancakes more than once a year and we like eating them for breakfast, lunch, and dinner.  Have some fun with your kids and surprise them with Breakfast for Dinner!
