I wanted to make some cupcakes for a little girl in our church, it was her birthday. I did not know what her favorite cupcake was so I thought that I couldn’t go wrong with Rainbow Cupcakes. Boy, was I right. These were a big hit with all of the kids, big and small.
Ingredients:
White cake mix | Baking cups |
Food coloring | Frosting |
Sprinkles |
Directions:
Mix up your cake mix according to the directions on the box. Take 6 different bowls and divide your cake batter evenly into the bowls. Now we will mix up the food coloring so you have rainbow colors.
Purple = 9 red drops and 6 blue drops | Blue = 12 blue drops |
Green = 12 green drops | Yellow = 12 yellow drops |
Orange = 12 yellow drops and 4 red drops | Red = 18 red drops |

Line your cupcake pans and evenly distribute the purple batter into all of the liners. Then add the blue, green, yellow, orange and red batter into the liners. You may need to spread the batter to the edges of the liner with the back of a spoon. Bake according to the recipe directions. Let the cupcakes cool completely and then frost with your favorite frosting and sprinkles.
Variations:
You may want to try and add your favorite flavor of jello mix to the batter. I have not tried adding the jello yet so I would recommend that you try only one flavor at a time. These cupcakes would be a great treat around St Patrick’s Day, Easter, or any day! Let me know what you think about Rainbow cupcakes.
