This recipe is a keeper. Once you try the ooey gooey deliciousness of this treat you will want it all the time!
|18 cups popped corn||1 cup corn syrup|
|1 cup sugar||1 tsp vanilla extract|
|1 cup peanut butter|
Note: this makes for a whopping family size amount, if you have a more traditional sized family you might want to halve the recipe. It stores well in ziploc and makes a great snack so making extra is not a bad thing.
First you want your popcorn ready and waiting. I use an air popper and I scoop out the popped corn by the handfuls making sure the unpopped kernels get left behind. I suppose you could buy microwave popcorn that is unbuttered and unsalted and that would work as well.
Once you have your popcorn ready add the corn syrup and sugar to a saucepan and cook over medium heat stirring throughout. Once the mixture comes to a boil keep stirring and let cook for about a minute. You just don’t want to over cook the sugar mixture or your popcorn will be brittle like. Unless you were going for that! Remove from heat and promptly add the vanilla and the peanut butter. Stir until combined and then pour over the popcorn. Mix and let cool before devouring.
